I found this little recipe online and made a few alterations, mainly adding nuts and chocolate nibs. It is a quick and delicious one bowl Banana Bread- gluten free of course! I have made it twice and for whatever reason the first time turned out much better. Anyway, here is the recipe:

3 ripe bananas
1/2 tsp vanilla extract
1 egg
3 Tbsp melted coconut oil
1/4 cup sugar
1/4 cup brown sugar
2-3 Tbsp honey or maple syrup
3/4 tsp sea salt
1/2 tsp cinnamon
3/4 cup unsweetened almond milk
1 1/4 cup almond flour
1 1/4 cup Gluten Free Flour Blend
1 1/4 cup Gluten Free Oats

Optional:
coco nibs/ chocolate chips
pecans/ walnuts

Preheat the oven to 350 F or 176 C. Line a 9×5 bread pan with parchment paper.

First mash the bananas in a large bowl. Then add all of the ingredients all the way through the almond milk. Once that is combined thoroughly, add the almond flour, GF flour and GF oats. At this point I added the coco nibs.

It should be a fairly thick mixture. Pour into the prepared 9×5 pan. Bake it for 1hr or 1hr 15 min. The bread should be firm, brown and crackly on the top.

Let the bred cool completely before cutting into it.

This bread can be frozen.
